Have you ever had your chocolate oatmeal no bake cookies not set up?
I have had this problem for years and have tried everything to figure out what I was doing wrong. Well I asked my daughter, Vanessa and her husband, Tyler solved my dilemma. Simply DO NOT OVER BOIL the Sugar, milk, cocoa mixture. Just cook on a medium heat – not high. And stir and stir and keep an eye on the pot! I took it off the heat as soon as it just started to boil. Added the oatmeal and let it cool for 10 minutes. Then I added the vanilla and peanut butter. Perfect Easy No Bake Cookies!
I searched online for answers and they suggested to boil the no bake cookies for 1 minute or 3 minutes. This does not work in Utah – just cook until it just starts to boil and take it off. We have been eating chocolate no bake cookies for years with a spoon! I am so excited that I can successfully make this recipe again!
1 cube maragarine
2 cups sugar
3 T. cocoa
1/2 cup milk
3 cups quick oats
1/2 cup nuts or peanut butter or coconut
In a saucepan mix and melt the margarine, sugar, cocoa and milk. Cook for about three minutes on a medium heat – take off of heat as soon as mixture begins to boil. Stir in oats and let cool for 10 minutes. Add vanilla and nuts or peanut butter. Place spoon fulls on cookie sheet covered with parchment paper. Enjoy the classic!
